Travis Herring, owner of Tâs Treats-N-More in Valdosta, says his longtime food truck business recently earned a 100 on its food service inspectionâa score he credits to consistency, strong routines, and a dependable team.
âWeâve been going since for 25 years,â Herring said, explaining the business started around 1999 into the early 2000s. Over the years, he said learning and sticking to the basics has been key when it comes to meeting health standards.
From one truck to five
Tâs Treats-N-More has grown significantly since the early days, when Herring said they were âbarely going.â Now, the business operates five different types of trucks, including ice cream trucks, snow cone and Italian ice trucks, food trucks, funnel cake setups, and trailers. While the fleet is large, Herring said they typically donât run every unit daily.
âEven though we have five trucks, we donât run all five every day. We run usually two trucks a day,â he said.

Serving a wide stretch of South Georgia (and sometimes Florida)
Based in Valdosta, Tâs Treats-N-More serves surrounding communities including Hahira and Adel and sometimes travels into Florida, depending on demand. Herring said they try to keep operations within about a 100-mile radius.
Menu has expanded well beyond ice cream
Herring said the business started simply with ice cream. Since then, the menu has expanded to include items like nachos with cheese, chili cheese nachos, hot dogs, slaw dogs, pulled pork, and more.
âWeâre especially known for our seafood rice,â he added.

Schools and events have been a game-changer
While the business began in neighborhoods, Herring said the last 10 years have been especially strongâthanks in part to school partnerships and large events.
âWeâre into schools now. We do a lot of field days. We can do up to a thousand, 1500 kids in a day,â he said. The business also has vending machines in schools, he added.
How they keep health standards high across multiple trucks
With multiple units, each truck is inspected separately, Herring said. Maintaining cleanliness comes down to routine and accountability.
He said leadership helps, but everyone understands whatâs expected. âThereâs certain people that⌠make sure everything is clean, but basically they know what weâre looking for at the end of the night,â he said.
Advice for others: itâs demanding, and consistency matters
For anyone thinking about expanding into multiple trucks, Herring offered a reality check: âItâs not for the weak. Itâs seven days a week⌠12 to 14 hours,â he said, adding that it requires sacrifices.
And for owners chasing a perfect inspection score, his answer was simple: consistency.
âTell them what youâre looking for⌠keep your standard at a high⌠keeping those standards high⌠and consistently meeting them,â Herring said.
Herring said he plans to keep the business focused on what works. âIâm a person that just like to keep it basic and small,â he said. âDo what works.â
